Dessert for breakfast fan anyone? Yes please! Acai bowls happen to be another one of my favorite healthy breakfast choices right up there with my chia seed pudding. I am not sure why I have not shared this recipe with you yet. Shame on me for keeping it all to myself! It is absolutely delicious! I eat this for breakfast at least twice a week. In fact they have probably been my obsession for about 5 years now. When I was pregnant (with my now 4 1/2 year old) acai bowls with fresh granola, berries and banana is all I wanted to eat. I was getting a berry bowl close to everyday. And at $6-$10 a pop it was time to make them at home! I will never forget going through my receipts at the end of the tax year in 2011. Most of the receipts were of me purchasing something on my pregnancy craving list. And the most purchased food item was these creamy textured cocoa-berry favored bowls! Luckily frozen acai smoothie packets are easy to find at grocery stores and Costco carries a large bag of them. There are powdered versions available too.
When Chase was about 9 months old and just starting to eat solids is when I really starting making acai bowls for him. I blend together an acai packet, spinach, berries, banana, apple juice and sometimes a dash of coconut milk. All of which is excellent for baby’s brain development. Even now when my boys are on their “not eating fruits and vegetables” kick we have our smoothie bowls as a quick fix. And they think its a treat.
My mouth is watering just thinking about and listing the gorgeous possibilities of making healthy acai bowls! Feel free to be totally creative with your toppings. When you make this thick blended smoothie recipe, add whatever toppings you want such as granola, fresh berries, pomegranates, chia seeds, hemp seeds, goji berries, bee pollen and even toasted coconut shavings – yumm!
- 1 acai frozen smoothie pack
- ¼ cup frozen spinach or fresh spinach (tightly packed)
- ¼ cup frozen strawberries
- ½ banana
- ¼ cup apple juice
- ¼ cup granola
- 5 slices of banana
- 2 Tablespoons pomegranate seeds or 2 fresh strawberries sliced
- 2 Tablespoons blueberries
- 1 Tablespoon hemp seeds
- In a blender or food processor blend all ingredients until smooth. If needed add more apple juice. It should be a blended very thick consistency. Pour in a bowl and top with granola, fresh fruit, and hemp seeds.
