Banana Bread Breakfast Bars Grain-Free Nut-Free

Ingredients
- 2 ¼ cup Beth Blends Grain Free Flour Blend
- ½ cup flaxseed meal
- ¼ teaspoon salt
- 1 cup coconut sugar or light brown sugar - if you use that
- 1 teaspoon cinnamon divided
- ½ cup coconut oil melted
- ¾ cup non-dairy milk of choice, can use flax, coconut milk in a carton, or hemp milk
- 1 teaspoon vanilla extract
- 3 small bananas cut into slices
- maple syrup for topping
Instructions
- Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with parchment paper. Spray the bottom of the pan with some oil first to help the paper stick.
- In a large bowl, combine the flour, flax seed meal, salt, sugar, and ¾ teaspoon cinnamon.
- Pour in the melted coconut milk, milk, and vanilla. Mix to combine and can use your hands if needed to form a dough ball. Press two-thirds of the mixture in the bottom of the prepared pan.
- Bake until golden brown, about 15 minutes.
- Remove from the oven and evenly top it with the banana slices and top with remaining ¼ teaspoon of cinnamon. Sprinkle with the reserved flour mixture. Bake until the top is golden brown, about 10-15 minutes. Let cool for 10 minutes, then use the parchment paper to lift from the baking pan and transfer to a wire rack to cool completely before slicing. Top each slice with maple syrup when ready to serve and enjoy!
