- celery stalk
- red bell pepper
- mayonnaise
- Dijon mustard
- salt to taste
- paprika which is optional for garnish and to add a little extra color

Step 1: Prep and chop the vegetables. Prep the hardboiled eggs. Transfer to egg white halves to a serving tray. Chop the cooked shrimp and place in the bowl with egg yolk. Add the celery, bell pepper, mayonnaise, and mustard. Stir to blend and season to taste with salt.
Step 2: Fill each egg white with the shrimp mixture. Optional to garnish with paprika or fresh diced chives for color.

Ingredients
- 15 hard boiled eggs
- 1 lb. medium shrimp cooked, deveined, and shells removed (you can buy them frozen like this for convenience)
- 1 celery stalk
- ½ red bell pepper
- ¼ cup mayonnaise
- ½ teaspoon Dijon mustard
- salt to taste
- paprika optional garnish
Instructions
- Cut the hard boiled in half lengthwise and remove the yolk and place in a large bowl. Transfer to egg white halves to a serving tray. Chop the cooked shrimp and place in the same bowl. Add the celery, bell pepper, mayonnaise, and mustard. Stir to blend and season to taste with salt.
