Delicious healthy apple crisp with Chia seeds baked in comforting brown sugar and Xylitol.
One of my favorite desserts is a good ol’ fashioned apple crisp. They are quick to throw together and sweet and savory to taste. Especially made with coconut oil. Instead of loads of brown sugar and butter I used honey and coconut oil with a sprinkle of pecans for added crunch. The honey makes this apple crisp with chia seeds super moist!
Two ways to make this apple crisp with chia seeds are to spread the filling in a 9×9 inch pan then sprinkle the topping on top, or core an apple and stuff it with the topping. Just add an extra 5 minutes to your cooking time when cooking the stuffed apple version. I also like to leave the skins on for added fiber and nutrition, but you can remove them before dicing if you prefer.
Ultimate Apple Crisp with Chia Seeds {gluten free}
Ingredients
- FILLING:
- 5 Granny Smith Apples cored and diced finely
- ¼ cup Pecans chopped
- 2 Tablespoons Xylitol or honey
- 1 Tablespoon Gluten Free flour mix
- ¼ cup Brown Sugar
- ¼ cup Honey
- TOPPING:
- ½ cup Gluten Free Flour mixture
- ½ cup Oats make sure they are GF version
- ⅓ cup Honey
- ¼ teaspoon Salt
- ¼ teaspoon Cinnamon
- 6 Tablespoons Coconut Oil chilled
- ¼ cup Pecans chopped
- 1 Tablespoon Chia Seeds
Instructions
- Preheat oven 350 degrees F. Spray a 9x9 inch pan with cooking spray. Mix all the Filling ingredients together and pour into pan.
- Mix all the Topping ingredients together (coconut oil should be chilled and mashed into mixture) and pour over your filling. Bake 30-35 minutes. Let cool about 10 minutes before serving.
