In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
Using a blender, add the eggs, strawberries and vanilla and blend until smooth, about 30 seconds to 1 minute.
Pour the strawberry mixture over the dry mixture. Add the oil and stir together until the batter is well blended.
Pour into the prepared pan.
Bake until a toothpick inserted comes out clean, about 45 minutes. Let cool for 20 minutes on a wire rack, then turn out the pan onto a rack to cool completely.
Sprinkle with confectioners' sugar or a natural confectioners' sugar such as Swerve or powdered monkfruit right before serving. Serve with fresh strawberries and optional whipped cream.
