Healthy Gluten-Free Strawberry Crisp

Healthy Gluten-Free Strawberry Crisp! This is an easy rustic free-form oat topping that becomes naturally moistened as it bakes into a buttery flavor. I like to use monk fruit sugar in the topping making it sugar-free. It is delectable served warm with a scoop of dairy-free whipped topping or ice cream.

INGREDIENTS

– 6 cups strawberries stems removed and cut into quarters – monk fruit (this is sugar-free, you can also use organic sugar, xylitol or erythritol) – cornstarch – vanilla extract – lemon juice prefer fresh – pink salt

Make The Filling – In a large bowl, combine the strawberries, sugar, cornstarch, vanilla, lemon juice, and salt. Toss to coat evenly and set aside. Make The Batter Topping – In a medium bowl, combine the flour, sugars, and salt. Cut in the butter until a fine crumb forms. Stir in the oats.

– In the prepared baking dish, add the strawberry filling evenly to the bottom. Crumble the topping over it evenly. Bake until the topping is golden in color and bubbling, about 45 minutes (less time if using a larger baking pan- see notes below). Serve warm with whipped topping or vanilla ice cream.
