INGREDIENTS

– extra virgin olive oil – red bell peppers – green bell pepper  – white onion  – garlic cloves – celery stalks – can of fire roasted tomatoes  – broth: chicken or vegetable  – Cajun seasoning – bay leaf dry – cooked long grain rice white or brown – shrimp – sausage (can use chicken sausage) – salt and pepper

Saute vegetables, add sausage, rice, seasoning, broth and tomatoes and let it heat for 4 minutes. Add the shrimp then cover a pot and cook for 10 minutes.
