  • 1/2 green cabbage chopped
  • 1 cup celery diced
  • 1 cup onion diced
  • 1 cup carrots sliced
  • 2 garlic cloves minced
  • 4 cups vegetable broth (or chicken broth)
  • 2 cups tomatoes diced
  • 1 teaspoon oregano dry
  • 1/2 teaspoon pink Himalayan salt
  • 1/8 teaspoon red pepper
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 bay leaf dry
  • 2 packets powder miso soup (or 1-3 Tablespoons white miso paste or (optional) vegan miso paste)
  • 2 tablespoons parsley fresh, optional for garnish

Slow Cooker

  • In a slow cooker add all the ingredients. Cook for 6-8 hours on low. Serve with bread or crackers (gluten-free) and garnish with fresh parsley.

  • Add all the ingredients in a large pot and turn the heat to high. When it starts to bubble on the sides, cover and turn the heat down to medium heat. Cook for about 20-30 minutes or until the carrots are soft.

For Vegan, use 1-3 Tablespoons of vegan miso paste (fermented soy bean paste or mushroom paste), one that does not contain any fish.
You can also find regular miso powder at Trader Joe's and most local grocery stores.
