Orange Juice Cake Glazed With Warm Cream Cheese Icing
The best gluten free Orange Juice Cake ever! Forget the Florida oranges or Sunkist oranges, if you can find any oranges just squeeze the juice right into the cake! This is the juiciest guilt-free gluten-free cake to be eaten at all celebrations!
Preheat the oven to 350 degrees F. Spray the inside of a 10 inch bundt pan with nonstick spray and set aside.
Make the cake by mixing together in a large bowl the gluten free flour, almond meal flour, salt, baking powder, baking soda and coconut sugar. Mix well to combine and set aside.
With an electric mixer add the Greek yogurt and honey and beat on medium-high speed to combine for about 30 seconds. Add 4 large eggs, vanilla, orange zest and ½ cup of orange juice. Beat on medium-high speed until combined. With the mixer on low slowly add half of the dry ingredients then almond milk and coconut oil. Slowly add the remainder of the dry ingredients until well combined. The result is a slightly thick batter.
Pour the batter into the prepared bundt pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. Remove from oven and allow to cool for 10 minutes before flipping the cake upside down on a cooling rack to cool. Let cool slightly. Add the glaze right before ready to serve and still warm.
Make the glaze: Whisk together the tapioca flour, Stevia sugar, cream cheese, coconut flakes, vanilla and 2 tablespoons of orange juice. Add more orange juice if you want a thinner glaze. Drizzle over warm cake and slice and serve. If serving later it is optional to warm the glaze it he microwave for about 10 seconds to melt then drizzle on top of the cake.
