Oatmeal Chocolate Chip Cookie Recipe

Combine in a medium bowl baking soda, salt, gluten-free flour, coconut flour, tapioca flour and oats. In a mixer bowl beat together the coconut sugar, butter and eggs until creamy. Beat in milk, vanilla extract and almond extract. Pour the wet ingredients into the dry ingredients. Fold in the chocolate morsels. Mix well. Refrigerate about 30 minutes.
Preheat oven 375 degrees F. Prepare a baking sheet with a silicon liner or parchment paper. Form dough into 1-inch round balls and place on prepared baking sheet about 2 inches apart. Bake 9-10 minutes. Remove and let set about 1 minute then transfer to a cooling rack. Store in an airtight container and consume within 3 days.
