Gluten-Free Almond Butter Cookies

  • Beat ghee and almond butter with an electric mixer on medium to high speed for 30 seconds. Add honey, Stevia, baking soda and baking powder. Beat until combined, scraping sides of the bowl. Beat in the egg and vanilla until combined. Beat in the flour. On parchment paper roll dough into a long log. Wrap in plastic wrap or parchment paper and chill dough for about 1 hour.
  • Preheat oven to 375 degrees F. Slice dough into ¼ inch strips and place 2 inches apart on an ungreased cookie sheet. If needed shape with hands to be a circular form. Flatten by making crisscross marks with the tines of a fork.
  • Bake for 5-8 minutes. Let cool 10 minutes before transferring to a wire cooling rack.
