Healthy Sweet and Sour Chicken

A healthy version of Sweet and Sour Chicken. Delicious served over rice and made with 4 easy ingredients!

  • 4 thin chicken breasts
  • 12 oz. of red pepper jelly seasonal at Trader Joe's is what I used
  • 3/4 cup of soy sauce


  • On low heat over a stove top combine red pepper jelly and soy sauce. Mix until heated and combined.
  • Add chicken, cover and simmer on medium-low heat for about 5 minutes, flip and sautee another 3-5 minutes or until cooked. Cooking time for chicken may vary depending on thickness of your meat.
