Cauliflower Rice Paleo Fritters
Can you tell I have a slight paleo and baked fritters obsession going on?
The other week when I went to Costco I think my eyes were much larger than belly because I came home with Costco size bags of organic cauliflower rice, organic mushrooms and organic zucchini squash. All to feed my we little family of four. Not an army, not Thanksgiving and not for event but my shopping cart sure did not look that way.
Costco is kind of like Target - you go in to get a couple of times like stocking up on bulk size paper towels and toilet paper and come out with new pillows, socks, and extras you do not "really" need at that moment. I think I was just so excited to get so many fruits and vegetables organic that I bought them all!
More on that... I turned bulk size mushrooms into two fabulous soup recipes that were then stored in the freezer and extras were toppings for Friday night pizza night.
Thursdays when our yard is getting gardened the boys love to sit outside and watch the weed-wacker at work. I could not disrupt them the other day as I was busy trying out this new paleo recipe together (perfect if you are on The Paleo Diet!).
These cauliflower rice paleo fritters are so easy to whip up and tastes just fried hash-browns or fried chicken fingers. They are packed with flavor and almost all vegetables! My kids have been eating them up and any mama has a big smile when the kiddos love their veggie packed meals! Can I get an AMEN to that!?!
For convenience you can buy organic cauliflower rice already ready in your local store... or Costco! We also love to use cauliflower rice in burritos or burrito bowls in place of grains.
Needless to say our household was a big fan of this meal. My husband asked did you shoot photos of these? They need to go on your blog so you can make them again!
They are so easy too because all you do is mix your fabulously healthy ingredients together and bake them on a sheet pan! Very minimal dishes, my friends. They turn out crunchy on the outside and warm and moist on the inside.
What you need for cauliflower rice fritters
4 cups cauliflower rice
¼ cup white onion, diced
3 eggs
1 cup shredded carrots
2 teaspoons apple cider vinegar
2 teaspoons pink Himalayan salt
½ teaspoon garlic powder
½ cup tapioca flour
¼ cup nutritional yeast
1 teaspoon chili powder (salt free)
½ teaspoon oregano
Recipe Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet pan with parchment paper.
In a small bowl whisk the eggs together. In a large mixing bowl add the cauliflower rice, onion, shredded carrots, apple cider vinegar, pink Himalayan salt, garlic powder, tapioca flour, nutritional yeast, chili powder, oregano and eggs. Mix together well until fully combined. - Using your hands form into 8 patties. They will be soft so form a ball in your hands then pat down on the baking sheet and squeeze the sides in. You should have 8 patties.
- Bake for 20 minutes then carefully flip the patty and press the top down slightly. Bake another 10-15 minutes until crisp.
Serve right away with a side of ketchup or your favorite dip.
