Hi, I’m Danielle the recipe developer, photographer and writer. Along side of me are my 3 boys who happen to be great little taste testers in the kitchen. I am thrilled you are here and that we are about to embark on this journey together!
About Delightful Mom Food:
It wasn’t until my mid 20’s that I really formed an interest in cooking and baking. In my teens and early college years I developed a relationship with food that I thought had to be “fat free”. I lost my dad to a heart attack at a young age, so in my head anything fried, creamy and fattening were a root cause to an unhealthy body. Little did I know…
When I got married at 26 I was told I could not have children due to Poly-cystic ovary syndrome which was extremely disappointing to say the least. I didn’t give up and after much research I realized I needed to make some lifestyle changes, most importantly starting with what I was eating. After a year and half of taking healthy herbal supplements, eating unprocessed foods, decreasing gluten intake, NO fake sugars, and good exercise – my body found balance again. We now have two amazing and healthy boys, and I have never looked back!
The misconception is that eating healthy is hard, that it takes too much time, costs too much, or the big one that you have to sacrifice taste and pleasure! I just want to help others realize, just like I realized that none of this is true!
And guess what, I eat a lot of fat, desserts and creamy sauces- only they are made super healthy using ingredients like coconut oil, Greek yogurt or nuts.
Good fats are good and desserts are good but everything in moderation. Some of my favorite healthy treats are Caramel Chocolate Oat Squares, Perfect Paleo Chocolate Chip Cookies, Healthy Chocolate Bundt Cake. I make all of my own recipes (unless stated otherwise). Each recipe is usually tweaked from another recipe just a bit to create a delicious healthy meal. Most of my recipes are easy to put together and all ingredients are the most natural. I don’t use white sugar often, instead I supplement it for honey, maple syrup, agave syrup, Stevia or Xylitol. Any flours used are Spelt (which is gluten free not wheat free) and gluten free flour mix. So if you are looking for processed or fried foods, you won’t find any here.
Not only will you come across healthy meals that are easy to make, they are geared towards kids taste buds too. My goal at Delightful Mom Food is to take the stress out of dinner, lunch, breakfast and snacks and provide delicious one dish meals that kids love to eat too!
I was born in New Jersey and when I was 12 our family moved to Virginia. From there I went to college in Washington D.C. for a year then moved to California to finish my studies. My major was Advertising with Graphic Design skills. My husband and I first met in college through a mutual friend from my husbands hometown. My sister is now married to that mutual friend- funny how friends really do become family! I fell in love with my husband the first time I spotted him though we both played hard-to-get for a while before we became inseparable. He is my best friend. Through thick and thin he is always so supportive of my kitchen messes, recipe flops, the sweat and time it takes to make this blog happen and the moments of joy it brings.
I strive everyday to balance work, being a stay-at-home mom, friends and fitness into my daily routine. I work out about 4-6 days a week mixing up running, weights and yoga. It really is my mental sanity that needs exercise. If there is no time I squeeze in a quick 30 minute High Interval Training workout while the kids are playing and dancing around me (or sometimes joining in!).

What food can’t you live without?
Acai Bowls, seafood, bread (ahh! I know, right? That is why I make my own gluten free breads)
What is the most amazing place you’ve visited?
The Bahamas. My husband and I won a trip to stay at the Atlantis when I graduated college!
Do you get stressed out?
All the time! I take deep breaths and do yoga. It helps keep me find balance and stay grounded. Stress is worthless wasted energy that should be focused towards important things like playing with my boys.
What is your favorite color?
The colors of the ocean- teal, blue and earthy stone colors.
What do you like to do in your spare time?
Hike, run, play at the beach with my family and work on this blog!
