If your kids are like mine the only way they “choose” to eat is through the drive-by method. The drive by method consists of me chasing the kids around with food in one hand trying to get them to take at least one bite while they play. Eventually we finish the meal… after about an hour- ahh! And if your kids are older like my niece and nephews, then it is just nearly impossible to get them to eat a balanced meal. That is why I love homemade cereal bars so much. They are easy to grab, pure chewy comfort food.
To ensure my kids are eating good wholesome foods with no added ingredients (ya know, those ingredients we can’t even to pronounce). I make this healthy cereal or snack bar recipe. They are super easy using only 4 ingredients. No bake cereal bars made out of Love Grown Foods Power O's cereal, coconut oil, marshmallows and sunflower seeds to be exact! They are incredibly healthy, super chewy and fabulously delicious! They kinda have the melt-in-your-mouth factor going for them too.
My family absolutely loves Food Grown Love’s cereal products. Their cereal is gluten free and made out of legumes and beans. There are tons of amazing products and variations of cereals and oatmeal flavors to choose from. And you can use any kind for this recipe. Since both Chase and Curren are huge chocolate fans, the chocolate granola and chocolate Power O's are a big hit with them. For mornings that we are quickly rushing out the door for school I grab a few cereal bars for each of the boys. My husband, not being a breakfast person, loves these too as they are perfect for him to take as he's heading out the door for work!
Why is it so hard to get kids to eat? I mean really, I look forward to eating. I can’t wait for dinner, breakfast - any meal for that matter including my little snack treats. The solution is to make food fun and make it with the kids if you can. My boys love smashing down the gooey marshmallow mixture into the pan with a spatula.
Cereal bars are easy to whip up for breakfast, snacks or dessert!
Heat coconut oil on the stove on low until melted. Then add your marshmallows and stir until melted and gooey. Turn the stove off and add the cereal and nuts. Mix well to coat with the marshmallow mixture. Then transfer to a prepared glass dish and smash down with a spatula until flat. Even push in the sides a bit so your bars are “tight” together in the dish. Let cool in the fridge then slice!

Ingredients
- 6 cups Chocolate Power O's or gluten-free cereal of choice
- 6 cups mini marshmallows
- 4 tablespoons coconut oil
- 1 cup pumpkin seeds
Instructions
- Spray a 9 x 13 inch pan with cooking oil.
- On the stove in a saucepan heat coconut oil on low until melted.
- Add marshmallows and stir until melted and gooey.
- Turn the stove off and add the cereal and nuts. Mix well to coat with the marshmallow mixture. Then transfer to a prepared glass dish and smash down with a spatula until flat. Evenly push in the sides a bit so your bars are “tight” together in the dish. Let cool in the fridge then slice and serve.
