Winter salad can come in so many varieties and the combination of fresh Fuyu persimmons with kiwifruit and crunchy walnuts is just a New Year party in the mouth! The best part of the salad though always comes from the dressing. Mix a little walnut oil with olive oil, garlic and balsamic vinegar and you will probably want to use it as a marinade and dressing for just about everything. Or try this winter salad with a champagne vinaigrette dressing for a sweeter side.
Before I get into this winter salad recipe deeper, I want to share my New Year thoughts with you. I don't know about you but there are A LOT of days where I feel defeated and depleted. In all areas of my life.... my children, my home, and lots of times this blog - especially those days where I make (for example) my homemade gluten-free bread 12 TIMES until it is perfect. But I'll tell ya, nothing is worth going for if it were easy. Otherwise we would give up on new challenges and new growth opportunities. We would not strive further for things our hearts yearn for and the yearly desires of who we want to become and continually are evolving into.
That might be a healthier diet, omitting fried foods, starting a yoga regimen, being slow to speak and quick to listen, having more patience, perfecting and becoming the best at your skills.... the lists could go on and on.
It is the start of a new year. A new beginning and an end to the things you want to close down. I encourage you (and myself) to do it- embrace life and all that you have to offer, because you do have so much to give. Thank you so much for making 2017 fantastic for me and being here to share this blog together. You, as a reader are what keeps me doing this and for that I am so grateful.
I am a totally different person then I was a year ago. So many new and amazing things to come on the blog for 2018!
It's kind of funny, we start out the year with healthy detoxing foods and end the year with as many high carb comforting baked goods as we can possibly enjoy. I think it is time for a healthy salad again, at least I know I sure need it!

Winter Salad With Kiwi, Persimmon, Walnuts and Cranberry

Ingredients
- 3 cups green lettuce chopped
- 1 Fuyu persimmon cut into slices
- 2 kiwi peeled and cut into slices
- ¼ fennel bulb cut into slices
- ½ cup walnuts
- ½ cup dried cranberries or pomegranate seeds
- freshly ground black pepper
Salad Dressing
- 2 tablespoons walnut oil
- 2 tablespoons extra-virgin olive oil
- 1 ½ tablespoons balsamic vinegar
- 1 small garlic clove minced
Instructions
- Make the dressing: Combine the walnut oil, olive oil, vinegar and garlic cloves in a small bowl or mason jar and whisk together to combine.
- In a large bowl layer the lettuce, walnuts and fennel, and drizzle with some dressing. Toss to combine and then top with kiwi fruit, persimmon slices and freshly ground black pepper.
Notes
*Use pomegranate seeds in place of cranberries for Whole30 & Paleo Diets.
