Here's a gluten-free Christmas cookie recipe that is has the perfect crisp with a moist texture that's perfectly sweet to satisfy a sweet tooth. These cookies are quick to make, tasty, and covered in red and green sprinkles. We love them made with coconut oil, but you can also use organic butter or vegan butter if you prefer a non-coconut flavor.

- 1 large egg
- vanilla
- baking soda

- gluten-free old fashioned rolled oats

Step 1 Prepare the oven: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Step 2 Make the dough: In a large bowl, using an electric mixer, mix together the wet ingredients. Add the dry ingredients and beat just until well combined. Stir in the chocolate chips or mint candies.
Step 3 Chill the dough: Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
Step 4 Scoop and roll the cookie dough: Using a cookie dough scoop, drop cookie dough about 2 inches apart on the prepared baking sheet. Use your hands and form into balls so they are compact.
Step 5 Roll in sprinkles: Add sprinkles to a small bowl and roll each ball in the sprinkles. Using the bottom of a cup, press each cookie down to flatten them slightly. They will not flatten during baking due to the sugar we use.
Step 5 Bake: Bake, let cool for 10 minutes, transfer to a wire rack to cool completely, and enjoy!

- Measure the gluten-free flour properly using a dry measuring cup and spoon. Use a spoon to scoop out the flour into a measuring cup then using the flat part of a knife level it off. This way you get the proper amount of flour and not too much as flour settles during shipping.
- Flatten the cookies with the bottom of a glass before baking. These gluten-free Christmas cookies do not flatten on their own in while baked the oven. So after they are rolled in the sprinkles then gently flatten to desired thickness, or about ½-inch.

How to freeze cookies and cookie dough: Freeze the cookies in a sealed zip-tight bag in the freezer for up to 2 months. You can also freeze the dough by wrapping it in plastic then placing in a freezer storage bag with all the air removed. Thaw the dough then scoop into 1-inch rounds and bake as instructed. If the dough seems a bit dry, add about 1 tablespoon (at a time) of water and use an electric mix to mix it until it is softer.

- ½ cup potato starch
- 1 cup chocolate chip morsels or green mint M&M's
- 6 tablespoons red and green sprinkles for coating
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, using an electric mixer on low speed, cream the soft butter (or coconut oil), brown sugar, monk fruit, egg, and vanilla extract together until combined. Add the oats, gluten-free flour, potato starch, baking soda, and salt and beat just until well combined. Stir in the chocolate coated candies.
- Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
- Using a cookie dough scoop, drop cookie dough about 2 inches apart on the prepared baking sheet. Use your hands and form into balls so they are compact.
