An easy slow cooked vegetarian recipe! Jackfruit pulled pork is the new meatless dish that tastes just like shredded pork BBQ! It is simmered slowly in the crock pot and can be served in tacos, sandwiches or by itself with a side of delicious crunchy coleslaw!
Wheew! That’s a long title, but I don’t know how else to explain it! I am going a little out of the ordinary here, but I know you will love it! Jackfruit pulled pork is surprisingly delicious in flavors and texture. I love the flavors of homemade BBQ sauce but I am not a fan of pork. I made this recipe previously using chicken in my Crockpot BBQ Chicken Recipe. But this time I decided to go vegetarian on you. There are a couple of meatless options that can be substituted in a BBQ pulled pork recipe. Two alternatives are Jackfruit and Mushrooms. Sounds strange, I know, but both can be shredded and turn into a tender meat-like consistency when slowly cooked in the crock pot. I went with Jackfruit and will try the mushroom version another time. And Jackfruit tastes just like pulled pork!
What is jackfruit pulled pork and the nutritional benefits?
I never even heard of jackfruit until looking up recipes for vegetarian pulled pork sandwiches. Jackfruit recipes were the big hit on my searches. At first glance, this large fruit looks leathery prickly and bumpy. Jackfruit is a very large edible fruit of the jackfruit tree from South and Southeast Asia. In Bangladesh jackfruit is served in many ways. Jackfruit curry, stir fry, juice, chips, ice cream, and even baking flour are just a few of this miracle fruit’s remarkable ways it can be used. It can be dried, fried, slow cooked into BBQ pulled pork or go ahead and grill it!
Jackfruits benefits are that they are rich in dietary fiber, minerals, and vitamins. It is high in vitamin C, vitamin B-6, niacin, riboflavin, and folic acid. It is also a good source of potassium, magnesium, manganese, and iron. Potassium is good for controlling heart rate and blood pressure. One bulb of jackfruit contains only about 95 calories with no trace of saturated fats or cholesterol, making it one of the healthiest treats to enjoy!
I tried it plain and the fruit is not very flavorful that way. If not using canned fruit, remove the skin and slice the whole fruit into your crock pot. You will use about 7-8 cups or 4 cans. I had a hard time finding it at local grocery stores so I bought a 6 pack of canned young green jackfruit in water from Amazon.

- Jackfruit Pulled Pork:
- 4 20oz cans of Jackfruit, water drained
- 5 oz. Worcestershire sauce
- 4 oz. Liquid Smoke (one small bottle)
- 1 Tablespoon pepper
- ½ onion, diced
- ½ cup celery, chopped and diced
- ½ cup olive oil
- 18 oz. Ketchup
- 1 cup water
- ¼ cup lemon juice
- ¼ cup apple cider vinegar
- ¼ cup dark brown sugar, packed
- 1 Tablespoon dry mustard
- dash of cayenne pepper
- Cabbage Slaw:
- ½ cup shredded green cabbage
- ½ cup shredded purple cabbage
- ¼ cup shredded carrots
- ¼ cup mayonnaise (I use vegan mayonnaise)
- 8 Ciabatta rolls or Gluten Free Rolls
- Add jackfruit pulled pork ingredients (first 14 ingredients) to a slow cooker. Cook on high 4-6 hours.
- With a fork, twist to pull jackfruit into shreds.
- In a small bowl stir together green and purple cabbage, carrots and mayonnaise until combined.
- Toast 8 rolls. Lay open faced. Add jackfruit pulled pork to 8 slices. Top with coleslaw. Put roll top on and serve!
