Alright I can't even start to explain how delicious this crock pot bbq chicken recipe is! I was first introduced to it at my bridal shower. Two of my mom's closest friends threw me the most thoughtful party months before my wedding. We had a full candy bar buffet, giant cake and the best BBQ pulled pork recipe I have ever encountered.
That was over 7 years ago and my mouth still waters thinking about it!
Now-a-days I don't eat pork or red meat. But I do eat (on a very rare occasion) chicken and fish. So I thought the base of the recipe would be perfect with chicken.
We made this crock pot bbq chicken for our superbowl party. My brother-in-law thought it was pork shreds until I told him the secret. We topped our BBQ chicken with fresh cabbage, cilantro and carrot shreds nestled it into a warm corn tortilla. Crockpot chicken tacos are now one of my favorite quick and easy party meals. Toss all the ingredients including chicken, ketchup, apple cider vinegar, lemon juice and seasons into the slow-cooker and let cook on high heat for 6-8 hours. The outcome is moist, delicious, rich melt-in-your mouth barbecue flavor that will leave your taste buds yearning for more!
Most chicken recipes are grilled or smoked, but crockpot meals take the hard work out of the formula. It really makes healthy eating pretty easy. And the clean up is only one pot!
- 6 chicken breasts
- 5 ounces gluten-free Worcestershire sauce (make sure it is gluten-free as most contain gluten)
- 1 Tablespoon pepper
- 1/2 cup chopped celery
- 1/2 cup olive oil
- 2 cups ketchup
- 1 cup water
- 1/4 cup lemon juice
- 1/4 cup apple cider vinegar
- 1/4 cup coconut sugar or dark brown sugar packed
- 1 Tablespoon dry mustard
- dash of cayenne pepper
- Add all of the ingredients to a slow cooker. Cook on low for 6-8 hours.
- With a fork, twist to pull chicken into shreds.
- Serve in tortilla's topped with fresh cabbage and salsa or by itself with a side of vegetables.
