I love to make batches at a time to eat with eggs for breakfast or dinner and throw leftovers into California omelets or burritos. When I made these the other night I knew I had to share the recipe with you. Our friend was over for our weekly Thursday dinner and happened to be a rushed day and all there was was frozen chicken in the freezer. I whipped up some pesto and made crockpot pesto and mushroom chicken and a salad. But the meal needed something hearty and starchy fill the bellies of four boys and their carbohydrate cravings. I had a few potatoes on hand and boring old baked potatoes on occasion do not sound too appealing. Mashed potatoes sounded like too much work, but savory rosemary roasted potatoes sounded like just the ticket to complete a gourmet healthy dinner!
Just chop the potatoes and toss them with salt, pepper and olive oil. Add a few fresh rosemary branches and leaves. Be sure to use golden potatoes or red potatoes. Not russet potatoes. They are not as nutritious and their skins are tougher. Now here comes the secret…the acid. Sometimes when food seems a bit bland we tend to just add salt. But the majority of the time foods just need acid to balance out the earthy tones like in these golden potatoes. Add a splash of apple cider vinegar and there will be a tang and warmth on your taste buds like no other! Then sit bake, pour a glass of wine or cup of tea and let those babies roast for 10 minutes then flip every 10 minutes until 40 minutes is reached. The result is the most decadent tender on the inside, crispy on the outside, flavorful rosemary roasted potatoes!
- 5 Medium Golden Potatoes
- 2 Tablespoons olive oil
- 1 teaspoon Himalayan salt
- ¼ Teaspoon freshly ground pepper
- 2-3 sprigs rosemary
- 2 teaspoons fresh rosemary leaves, chopped
- 1½ teaspoons apple cider vinegar
- Preheat the oven to 400 degrees F. Line a large baking pan with parchment paper.
- Dice the golden potatoes into ½-inch cubes.
- In a large bowl mix together olive oil, apple cider vinegar, salt, pepper, chopped rosemary leaves and diced golden potatoes. Toss the potatoes until coated.
- Pour potato mixture on the parchment paper lined baking pan. Flatten and spread out so that all the potatoes are evenly distributed. Add the rosemary sprigs on top.
- Bake for 40 minutes, flipping the potatoes every 10 minutes so that they do not burn.Serve right away.
