How long to cook brussels sprouts on the stove
These pan fried brussels sprouts on the stove takes about 5 minutes to caramelize the shallots then only 10 minutes to cook the brussels sprouts with the flat side down first, then flip them around and cook for another 5-6 minutes until crispy.
Recipe tips
- Make sure to cook the brussels sprouts without overlapping so you do not crowd the pan. If you crowd the pan the sprouts will steam rather than get crispy. Arrange them in the frying pan in a single layer so air can circulate, just like you do when roasting them.
- Use an oil with a high smoke heat point. Olive oil and some oils reach their heating points around 375 degrees F or so to 450 degrees F. Safflower oil and Avocado oil are great options.
- Brine the brussels sprouts first to remove debris and prep for cooking. Then trim and cut them.
Safety tip
Use a mesh splatter screen to prevent oil from splattering out and to help keep the stove clean.

- Fry the brussels sprouts in hot oil in a cast iron skillet. Heat oil and cook the vegetables.
- Add fig and blue cheese crumbles.
Step 1: Wash, soak, trim, and prep brussels sprouts. Cut shallots and figs. Heat Oléico Safflower Oil in a large iron skillet.
Step 2: Cook shallots. Then cook the garlic and fig. Remove from pan.
Step 3: Heat the remaining oil and cook the brussels sprouts face down for 5 minutes.
Step 4: Flip and cook another 5 minutes until charred.
They should be nice and browned but not burned completely.
Step 5: Pour in the cooked figs and onion to the pan, stir to mix, and heat for 30 seconds to warm.
Step 6: Add blue cheese right before serving and serve right away.

I'm using Oléico Safflower oil, which is made from High Oleic Safflower Seeds. Oléico is 100% natural, expeller expressed without the use of chemicals! With a smoking point of 450°F, it's safe for frying and results in remaining both flavorless and odorless.
This makes it a great choice for cooking, frying, baking, and works really well as a base for marinades and salad dressings. Perfect for making champagne vinaigrette and homemade Italian dressing!

Fried brussels sprouts can be a healthy vegetable option since sprouts are packed with nutrients and fiber. Make sure to use a cooking oil that can withstand high heat so the heat does not change the chemical form to a trans fat (or unhealthy fat).

Ingredients
- 1 lb. brussels sprouts
- 1 shallot diced
- 5 tablespoons Oléico Safflower Oil
- 8 ounces fresh figs cut into quarters
- ½ cup blue cheese crumble
- 3 cloves garlic minced
Instructions
- In a large cast iron skillet, heat 2 tablespoons of oil over medium heat until warm. Add chopped shallots and caramelize for 5 minutes until they become translucent. Add in garlic and figs and cook another 1 minute. Remove and transfer the onions, garlic, and figs to a plate.
- Add the remaining 3 tablespoons of oil to the skillet and increase the heat to medium-high heat. Cook the brussels sprouts. Add the brussels sprouts to the pan with the flat side down first. Cook until crispy and do not turn them over until they are slightly browned and golden brown (even slightly charred), about 5 minutes. Turn them over to the other side and cook another 5-6 minutes until crisp. Pour in the cooked figs and onion to the pan, stir to mix, and heat for 30 seconds to warm.
- Transfer to a serving dish. Finish by topping it with blue cheese crumble. Serve immediately.
