I call them my weight loss cookies, delicious to enjoy with a Green Detox Juice For Weight Loss drink. They are made with 3 ingredients that bake into a wonderfully crisp cookie full of tropical flavor, making them a perfect choice for anyone looking for a guilt-free indulgence that come together quickly.
Most 3 ingredient cookie recipes contain some sort of cake mix or brownie mix in the ingredients. These healthy cookies are made with natural plant-based ingredients:
- unsweetened shredded coconut flakes
- coconut oil
- maple syrup
Yep- that is it and they are delicious if you like coconut and tropical foods like Pineapple Orange Juice and Coconut Milk Ice Cream.
How to make 3 ingredient cookies without butter

Add everything to a food processor.
Blend until smooth and forms a slight dough/clumps. Use a tablespoon to scoop the dough and pack it in the tablespoon so it does not fall apart.
Transfer to a prepared baking pan and lightly tape the tablespoon to transfer the dough to the pan. Gently press down with hands to lightly flatten the 3 ingredient cookies.
Bake in the oven and let the cookie recipe cook completely before moving from the pan and storing.
How to store these cookies
Store these cookies in a sealed airtight container on the counter or in the refrigerator. These are best consumed within 3 days.

If your cookies are hard to form into balls, simple add a splash more maple syrup to the dough. Be sure not to overbake them as this can cause them to become more dry.

- 1 cup shredded coconut unsweetened very fine
- 1 ½ tablespoons coconut oil soft
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 300 degrees F. Spray a non stick baking pan lightly with cooking spray.
- Add coconut flakes, coconut oil, and maple syrup to a food processor. Blend on high until it starts to clump and resemble dough.
- Use a round measuring tablespoon and scoop out the dough. Pack it down and transfer the scoop to the baking sheet. Repeat for the rest of the dough until you have 12 cookies and place them 1 inch apart. Using your hand, gently press the cookies down to flatten lightly.
- Bake for 11-14 minutes or until lightly golden brown in color. Remove from the oven. Let them cool completely before transferring them to a cooling rack or container to store. Optional to drizzle melted chocolate on top once they cool.
