Three-ingredient Brisket Queso comes together in 30 minutes and is the ultimate crowd-pleaser! Rich, lower fat queso cheese meets smoky brisket for a savory dip with bold flavor in every bite. Perfect for parties, game days, or brunch, this queso pairs beautifully with baked tortilla chips, serves as a dip for ham quiche, or even as a topping for scrambled or cloud eggs. It’s a quick and delicious way to add a touch of Texas to any gathering!

Now that we are living in Texas from California, we have been introduced to the most amazing staple foods of the state: Brisket. We first stumbled upon brisket queso from our local grocery store and my husband is a huge fan so we had to remake it at home - this version wtih only 3 simple ingredients and lower in fat!
If you are new to beef brisket, brisket is slowly cooked with smoky flavors that is delicious alone, and even more fabulous mixed with queso and pico de gallo for this Mexican inspired brisket queso recipe. It is so simple to make with the star of the show being this queso!
Why you'll love this brisket appetizer and side
For starters, you don't even have to make your own brisket to make this dish. Although, you can if you don't mind waiting for hours for it to cook - here's a brisket recipe to try. You can get precooked beef brisket in the grocery store in the meat section for convenience. Here's what you'll love about this recipe!
- Made with 3 ingredients
- Much lower in fat that most queso recipes
- So simple to make and comes together in less than 30 minutes!
- Great to serve at sports parties, brunch, and as an appetizer
What ingredients you need
- Precooked beef brisket - get the version that comes in chunks or shredded, chopped into small pieces
- Desert Pepper Chile Con Queso - this is delicious, creamy, and only 2 grams of fat per serving!
- Pico de gallo - this also I got in the grocery store premade. You can also make your own by mixing together onion, tomatoes, and cilantro. For a spicy version, add a bit of chopped jalepnos.
Chef's tips
Leave the baking dish upcovered while you bake and cook for only about 15 minutes or until warm to prevent burning the top.
I have been loving Desert Pepper's different salsas which you can add all of them as sides. They have Chili Con Queso, Cantina Medium Red Salsa, and Peach Mango Salsa (which has just the right amount of heat with the sweet). They are delicious, chunky, and the queso is a healthier sauce than any other queso I have seen at stores.
It’s pretty much a winning meal because there are hardly any dishes used in the preparation! Mixing the sauce in the spaghetti squash eliminates a baking dish.
What to serve with brisket queso
This brisket appetizer is wonderf for super bowl parties, sporting parties, Halloween parties and more with a Homemade Salsa and Guacamole and Chips. It pairs great as a topping mixed together with Crock Pot Chicken for a high protein keto dinner! We even enjoy it served over Green Eggs and Spinach Quiche for a heartier dish at brunch.
You can even toss it with Cooked Spaghetti Squash for a rich low carb dinner. So many options to use brisket queso! Brisket with queso just adds the perfect touch of smoky and rich flavor to foods, but our favorite way to eat it is with chips.
I seriously had to take the bowl away from husband after taking these pictures to keep him from devouring the whole dish! It is quite addicting and I can wait to hear what you think too!
