I know, I know…. another meal plan? Yes, but this one will serve as a great guide to help you make healthier choices when it comes to the food you eat. These are 17 of our family favorite go-to low fat recipes that we enjoy, are mostly gluten free and budget friendly. Yes, budget friendly organic and super healthy! Whenever someone says that healthy eating is too expensive I want to take them grocery shopping and share the possibilities! When gathering ingredients search for fresh organic meats on sale and freeze for future recipes. Also dry beans are only about a dollar per pound so buy beans dry and cook in a slow cooker for chili and enchiladas. I freeze everything, so if I happen to make too many beans that we won't eat that week I freeze batches in small freezer bags and take out as needed.
Quiches, pies, slow cooker meals and chopping vegetables can be done ahead of time for the week or made over the weekend. Then simply freezer wrap and put in the freezer for an easy ready to thaw and heat dinner – freeing up more time for family and play! If you are vegetarian, just omit the meat from any of the recipes and substitute with beans.
These dinner recipes are so delightful in flavor, incorporate tons of vegetables and whole grains and are super kid friendly. Another benefit is eating lots of fruits, vegetables and whole grains makes your skin look amazing and your body way more energized!
